当日は11時の開店前に訪問したが、もう既に15人ほど並んでおり、1時間ほど並ぶのは覚悟しなければならない。接客は、料亭みたいな振る舞い方で少し緊張した（）ラーメン自体はカエシを使ってない、フレンチの技法を用いたブイヨンのようなスープで、深い味わい。アッサリ目で、素材の味が伝わりやすい。香りも凄く感じた。
